ABOUT US
The Royal Mail Hotel is located in the beautiful southern Grampians town of Dunkeld, VIC, approximately 3 hours from Melbourne.

Our award-winning boutique hotel features:

- Two restaurants: Parker Street Project & Wickens at the Royal Mail (2 hats)
- A multi-award-winning cellar with some 26,000 bottles
- A 1.2-hectare kitchen garden delivering fresh produce daily to our kitchens
- Farms which provide our lamb and beef
- Conservation program including native animal breeding
- Native gardens

We're passionate about providing exceptional customer service and presently seeking to expand our fine-dining team within our restaurants. We are seeking full-time staff to work a 4 day week Wednesday - Saturday. You must be available for a minimum of 6 months.

We're looking for individuals who demonstrate a passion for food, wine and local produce and seek to provide personable service to every guest.

Duties will include:

Learning the menu - be experts on our restaurant’s offerings. Whether it be explaining the ingredients, preparation techniques, daily specials or additional courses, or the available substitutions. They also may offer suggestions to enhance the experience, such as which wine pairs well with a given entrée.

Managing orders - take food and beverage orders from customers, deliver written requests to the kitchen for preparation, carry items to the table in the proper order, help as needed with the removal of finished plates, refill drinks and collect payment when the experience is complete.

Providing customer service - whether a food item isn’t up to satisfaction, a guest drops their fork and needs another one or the air conditioning is too cold, you will help to rectify the problem

Following procedures - you will follow restaurant guidelines in order to keep operations flowing and service consistently. You will also pay close attention to safety measures so that food does not inadvertently become contaminated or someone gets burned by a hot plate.

ABOUT YOU
Fluent English is required
Previous fine dining restaurant experience would be highly favored particularly hatted restaurants.
A desire to consistently perform at the highest level and take pride in your presentation
Current RSA, or willingness to acquire
Must be available evenings Wednesday - Saturday
